Let them (the vegans) eat cake !

also it's gluten free, and dairy free so let EVERYONE eat cake !



The thing about this cake is that it's delicious EVEN though its gluten free, dairy free, and vegan. The addition of the banana adds more moisture to it, but I also have made this recipe omitting the banana, and it comes out just as good.



Cake for everyone !

2 1/2 c gluten free flour (I always use this brand)

2 T cornstarch

1 T baking powder

1/2 t salt

1 1/2 c sugar

3/4 c oil

1 1/2 c oat milk

2 t apple cider vinegar

2 t vanilla

1 ea banana, smashed (note)


  1. Grease cake pans with coconut oil (pans I use for small layer cakes)

  2. Pre heat oven to 350*

  3. Mix all ingredients together in a medium mixing bowl with a whisk until batter comes together

  4. Pour into pan and bake 20 minutes or until done (note on baking times and temperatures here)

Variations : For chocolate cake add 1/2 c cocoa powder and omit banana



Vegan Vanilla Buttercream


12 oz butter vegan (I use this brand)

16 oz powdered sugar

2 t vanilla


  1. Mix all together in mixer with paddle attachment

  2. Let mix 4 minutes

  3. Scrape down and mix for 1 minute more



Banana

When your recipe calls for banana, in bread or cakes, and you don't have any that are ripe; put the banana in the microwave for 30 seconds at a time. The banana will become instantly perfect for any recipe! You can also do this in the oven, place in at 350* and wait for the bananas to essentially 'roast' and turn brown, remove and add to your recipes!
